Broccoli and Zucchini with Vinaigrette

List of Ingredients
3/4 lb. broccoli florets
3/4 lb. zucchini, cut into 1/4 inch thick slices
1 red bell pepper, seeded and cut into 1/4 inch strips
3 Tbs. olive oil
2 Tbs. balsamic vinegar, or red wine vinegar
1 clove garlic, minced
1/4 tsp. thyme, or 1 tsp. fresh, minced
Recipe
Place broccoli in a steamer basket over boiling water. Cover saucepan and steam 3 minutes or until broccoli is bright green. Transfer broccoli to a mixing bowl. Add zucchini and bell pepper and toss. Combine remaining ingredients and salt and pepper to taste in jar with a tight-fitting lid. Shake vigorously. Pour dressing over vegetables and toss.
