    Annie's Raspberry Cheesecake

    List of Ingredients




    2 graham cracker crusts

    FILLING:
    2 8 oz. pcks cream cheese, softened
    2 eggs
    3/4 cup + 2 TBSP sugar

    Cream together until smooth. Add:

    1 TBSP lemon juice
    2 tsp vanilla

    Pour over crusts and bake at 350 for 22 minutes.

    SOUR CREAM TOPPING:
    1 16 oz container sour cream
    4 TBSP sugar
    2 tsp vanilla

    Mix together and pour over cheesecakes. Bake an additional 12 minutes. Cool completely, then chill.

    RASPBERRY TOPPING:
    1 small pack frozen raspberries
    1/2 cup sugar
    1 TBSP corn starch

    Cook until clear, then let stand for 2 hours. Pour on top of cheesecakes and chill.

    Makes 2 8" cheesecakes, and that still won't be enough.
