- 4 cups (8 ounces) uncooked egg noodles
- 2 tablespoons butter
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons butter
- 2 cups (2 medium) sliced zucchini
- 1/4 cup sliced green onions
- 1 teaspoon finely chopped garlic
- 6 ounces ham, cut into strips
- 1 cup frozen corn
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Cook noodles and drain. Toss with 2 tablespoons butter and 2 tablespoons parmesan cheese; keep warm. In a 10 inch skillet, melt 2 tablespoons butter; add zucchini, onions and garlic. Cook over medium heat for 4 minutes. Stir in ham, corn, salt and pepper. Continue cooking, stirring occasionally, until zucchini is crispy tender and mixture is heated through (3 to 5 minutes). Serve over warm noodles; sprinkle with additional parmesan cheese.
