Beef: Sicilian Skillet Supper

- 1 1/2 cups rotini or penne pasta
- 1 pound lean or medium ground beef
- 1 1/2 cups spaghetti sauce with mushrooms and peppers
- 1 small zucchini, sliced
- 1 (12 ounce) can whole kernel corn, drained
- 2 medium tomatoes, cut in large chunks (optional)
Instructions
- Cook pasta according to package directions; drain. Meanwhile, in a large skillet cook beef until no longer pink; drain off any fat and add spaghetti sauce; simmer 5 minutes. Stir in zucchini and cook over medium heat for 5 minutes. Stir in corn and pasta and heat thoroughly. Stir in tomato chunks just before serving, if desired.
