Beef: Texas Style Beef And Rice

- 1 pound ground beef
- 1 large onion, chopped
- 2 1/2 cups water
- 1 cup rice
- 3 beef bouillon cubes, crushed
- 1/2 teaspoon dry mustard
- 1 (10 ounce) can rotel diced tomatoes and green chiles
- 1 cup cheddar or monterey jack cheese, shredded
Instructions
- Brown beef with onion in skillet; drain fat. Stir in water, rice, crushed bouillon cubes and dry mustard; bring to a boil. Reduce heat, cover and simmer until liquid is absorbed, about 25 minutes. Stir in green pepper and rotel tomatoes. Sprinkle cheese over top. Cover and remove from heat. Let stand 2 to 3 minutes to melt cheese.
