Cream of Pumpkin Soup

List of Ingredients
- 2 Tbl butter
- 1 cup heavy cream
- 1/2 lb yellow onions, chopped
- 1 Tbl flour
- Dash pepper
- 10 1/2 oz can condensed chicken broth, undiluted
- 2 cups pumpkin
- Dash ground Cinnamon
- 2 cups Milk
- Nutmeg
Instructions
- Melt butter in a 6-quart pot. Saute onion, stirring occasionally, until tender. Remove from heat.
- Stir flour into the onion mixture; gradually whisk in the chicken broth. Bring to boil, stirring occasionally.
- Reduce heat, then add the remaining ingredients, whisking during each addition. Allow to simmer, covered, about a half hour over a very low heat, stirring occasionally to prevent scorching.
- Serve with a garnish of ground ginger. Serves about 8.
