    Cream of Pumpkin Soup

    List of Ingredients


    • 2 Tbl butter
    • 1 cup heavy cream
    • 1/2 lb yellow onions, chopped
    • 1 Tbl flour
    • Dash pepper
    • 10 1/2 oz can condensed chicken broth, undiluted
    • 2 cups pumpkin
    • Dash ground Cinnamon
    • 2 cups Milk
    • Nutmeg


    Instructions


    1. Melt butter in a 6-quart pot. Saute onion, stirring occasionally, until tender. Remove from heat.
    2. Stir flour into the onion mixture; gradually whisk in the chicken broth. Bring to boil, stirring occasionally.
    3. Reduce heat, then add the remaining ingredients, whisking during each addition. Allow to simmer, covered, about a half hour over a very low heat, stirring occasionally to prevent scorching.
    4. Serve with a garnish of ground ginger. Serves about 8.
