    List of Ingredients






    1—100 ounce can sour kraut, drained and washed
    4 -6 tablespoons molasses
    Sachet—1 tablespoon caraway seed, 1 ½ tablespoons juniper berries, crushed, 4 bay leaves.
    3 -5litres chicken stock very tasty
    6 cloves garlic minced
    2 onions sliced very thin
    5 or 6 peeled potatoes
    3 smoked pork hocks
    1 smoked pork loin, bone in
    8 strips of bacon diced

    Recipe




    Method;
    In a brazier, sweat off the bacon, add the onions and garlic sweat off, and add the sauerkraut, chicken stock, molasses, sachet, pork loin and the pork hocks. Bring to a boil and simmer. Put a lid on and put it in a 325 F oven until the pork loin is tender. Remove loin and continue to cook until hocks are done, remove. Grate in the potatoes and continue to cook in the oven with the lid off. When cooked, remove from oven and serve.
