Sweet Potato Dog Treats

Today we've got a guest recipe from Ann Clark, Ltd., a company in Vermont that's been making super cute cookie cutters (including dog-related shapes like dog bones and fire hydrants) for over 20 years. This recipe produces about 12 large treats (the finished product isn't hard and crunchy but more cookie-like in consistency. ) They'll last in an air-tight container for up to three days or you can store them in a zippered bag in the freezer. List of Ingredients
1 (15 oz) can sweet potatoes, drained
(or substitute 1 1/2 C mashed cooked sweet potato or pumpkin)
1/4 C unsweetened applesauce
2T olive oil
2 C barley flour
2/3 C whole-wheat flour
1/2 C nutritional yeastRecipe
Preheat oven to 350°F. Line a baking sheet with parchment paper. In a food processor, process the sweet potato, applesauce, and olive oil until smooth. Add the flours and yeast and process/pulse to blend. Turn dough out onto lightly floured counter and knead two or three times if necessary to completely mix ingredients. Roll out to 1/4" thickness, cut into shapes, and transfer to prepared baking sheet. (Scraps may be re-rolled and cut.)
Score large cookies with a fork, if desired. Brush lightly with olive oil and bake for 20-25 minutes, until firm and lightly browned. Cool before serving or storing.
