    Amish Cinnamon Bread

    Sunday, May 12, 2013 Super easy sweet bread. This requires no kneading, just mix it up and bake it. Makes a wonderful dessert or even quick breakfast. - Farm Girl=================================== ***my notes: I've revised the wording of the instructions. Also, I think I would add toasted walnuts to the recipe. AND, there is no salt in the recipe, perhaps a pinch or 1/4 t would enhance the flavors?

    List of Ingredients

    Topping & Filling:
    2/3 C Sugar
    2 t Cinnamon

    Quickbread:
    1 C Butter, softened
    2 C Sugar
    2 Eggs
    2 C Buttermilk
    4 C Flour
    2 t Baking Soda

    Recipe

    Pre-Heat Oven To 350°F.

    Topping & Filling:
    Combine sugar and cinnamon; set aside.

    Quickbread:
    Grease two 9x5" loaf pans. Set aside until needed. Cream together butter, sugar and eggs. Add buttermilk, flour and baking soda. Mix well. Pour 1/4 of the batter into each greased loaf pan. Divide 3/4 of the cinnamon mixture between the two pans (sprinkling 4 T + 3/4 t cinnamon-sugar onto each). Divide remaining batter between the two pans, then sprinkle with remaining topping mixture (1 T + 1 1/4 t for each loaf). Swirl loaves with a knife to achieve a marbling effect. Bake at 350°F for 45-50 minutes or until a toothpick tester comes out clean. Cool for 20 minutes before removing from pan. MAKES 2 LOAVES.

    Excellent if eaten warm out of the oven but great toasted with a little butter or cinnamon butter. Enjoy, Farm Girl
