    SOUTHERN PRALINE PECAN BUNDT CAKE

    Source of Recipe

    web/don't remember

    List of Ingredients

1 (18.25 oz) box butter pecan cake mix*
1 (16 oz) package coconut pecan frosting
    4 eggs
    3/4 cup vegetable oil
    1 cup water
    1 cup chopped pecans

    Recipe

Preheat oven to 350°F. Spray a 9 or 10" Bundt pan with cooking spray. Combine cake mix, frosting, eggs, oil, water and 1/2 of the pecans. Mix until combined. Sprinkle the remaining 1/2 pecans in the prepared Bundt pan then pour in the cake batter. Bake for 50 minutes or until a toothpick comes out clean. Makes 1 -9 or 10 inch bundt cake.

    * Dry mix is getting impossible to find. There are 2 solutions. One poster said canned butter pecan frosting can be subbed successfully. It yields a very moist cake. Also Pillsbury website has a dry mix that can substitute:

    1 cup sweetened flaked coconut
    1/2 cup chopped pecans
3/4 cup brown sugar, firmly packed
    3 Tbl. butter or margarine
    1/2 cup all-purpose flour

    1. In a medium bowl, combine coconut, brown sugar, flour and pecans; mix well.
    2. Using fork or pastry blender cut in butter or margarine.

Here is a foot note the original poster had with the recipe:
(Do you have a recipe calling for dry coconut and found it no longer available?
Well no need to fret! Pillsbury has provided this helpful recipe for cooks who still want to use tasty recipes calling for the mix!)
I haven't used this but it does sound like it should work.

I'm not sure, but I'm thinking that this is suppose to be the can of frosting. my aunt makes a cake that is very similar to this and it uses the canned frosting. i live in Arkansas and i see this canned frosting at all the grocery stores. amy
