    3 c. sifted cake flour
    2 c. sugar
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
    3 eggs, well beaten
    1-1/2 c. vegetable oil
    1-1/2 tsp. vanilla
    2 c. finely chopped pecans
    1 (8 oz.) can crushed pineapple with juice
    2 med. bananas, mashed

    Recipe



    Combine dry ingredients. Mix eggs, oil and vanilla. Add dry ingredients; blend. Stir in pineapple, bananas and pecans. Mix, then pour into 3 greased and floured 8 inch round cake pans. Bake at 350 degrees for 25-30 minutes.

    FILLING AND ICING:
    1/2 c. butter, softened
    1 (8 oz.) pkg. cream cheese, softened
    1 box confectioners' sugar, sifted
    1 c. finely chopped pecans

    Mix all ingredients. Spread in between layers and on top of cake.
