Recipe Introduction
I found a mug cake recipe on the web and I thought "fantastic, can't wait to dig in to a luscious single serving of delicious cake"! NOT!!! The recipe called for so much liquid that along with the 3 minute cooking time, it turned out more like a quiche/flan oddity. Yuck! So I experimented; reduced the liquids and cooking time and I must say my resulting creation is quite tasty and satisfying.
List of Ingredients
3 T Water
3/4 - 1 T Oil
1/2 T Liquid Egg Substitute
7 T Cake Mix*
optional add-ins/toppings-flavored chips; heath pieces; etc.
*I used Pillsbury Sugar-Free Classic Yellow Cake Mix
Pam or other cooking spray
Recipe
Spray the interior of a microwave-safe mug (at least 10 oz capacity) with cooking spray.
In a small bowl, combine water, oil and egg substitute. Add in the cake mix and mix thoroughly until a smooth batter forms. Stir in any add-ins desired.
Pour into sprayed mug and sprinkle with desired toppings. Place in microwave and cook until toothpick tester comes out clean - my microwave took 1 1/2 minutes.
Frost if you want and enjoy.
