    Ground Beef & Sauerkraut Mashed Potatoes

    Recipe Introduction


    If you like the taste of sauerkraut and are looking for a new comfort food, serve up some hamburger and sauerkraut mashed potatoes. The dish is hearty and contains a serving of protein, carbohydrates and a vegetable. The recipe is easy to make and doesn't require many ingredients. Once everything is prepared, pile it into a casserole dish, pop into the oven and you're done. You can also get creative with the recipe, adding cheese, fried bacon or onions if you desire.
    Peel six large potatoes. Place into a pot of salted water and boil until fork-tender and done. Drain the potatoes. Add 1 tsp. of salt and black pepper, 3 tbl. of butter and 1/2 cup of milk to the potatoes. Mash the potatoes until fluffy. Add more milk, if needed, adding a little at a time until you achieve the desired consistency. Brown 1-pound of hamburger meat in a frying pan and drain off the grease when done. Add 1 tsp. of salt, black pepper and onion powder to the hamburger while it is cooking. Heat the oven to 375°F. Grease a 13x8" casserole dish with vegetable oil spray. This will keep the food from sticking to the pan, making it easier to dish out and to clean up later. Evenly spread half the mashed potatoes on the bottom of the casserole dish. Spread the hamburger meat evenly across the layer of mashed potatoes. Open the sauerkraut and drain off the liquid. Spread the sauerkraut evenly over the layer of hamburger meat. Spread the remaining mashed potatoes evenly over the sauerkraut. Sprinkle a thin layer of panko breadcrumbs over the mashed potatoes and dot the top with butter. Bake at 375°F for approximately 45 minutes. The center will be hot when the mashed potatoes are thoroughly heated. This recipe makes approximately six servings.

    If you desire, you can also mix all the ingredients together instead of layering them. Bake for the same amount of time.

    Fry up some bacon pieces and add chopped onion to it. Mix in with the mashed potatoes to add more flavor to the dish.
