*Baked Corn
1 can creamed corn
1 can whole kernel corn
Sm. container sour cream
1 stick melted butter
2 eggs
1 box Jiffy cornbread
Mix creamed corn, whole kernel corn and sour cream together. Put in a 13x9" pan. Mix butter, eggs and cornbread together and top over corn mixture. Bake at 350°F for 30 minutes.
*Baked Corn Casserole
1 pkg (8 1/2 oz) corn muffin mix
1 can (15 3/4 oz) whole-kernel corn, drained
1 can (14 3/4 oz) cream-style corn
1 cup sour cream
1/4 cup (1/2 stick) butter, softened
1 egg
Preheat the oven to 350°F. Coat a 2-quart casserole dish with nonstick cooking spray. In a large bowl, combine all the ingredients; mix well. Pour into the casserole dish. Cover and bake for 30 minutes. Uncover and bake for 30-35 more minutes, or until set and the top is golden. Serves 4-6.
Note: To give this a sprinkling of color, mix in some chopped red or green bell pepper along with the other ingredients.
