    1/2 c. butter
    3/4 c. light brown sugar, not packed
    1 egg
    3/4 c. ground walnuts
    1 tsp. maple flavoring (if using English walnuts)
    1 1/4 tsp. if using black walnuts
    2 c. flour
    1/4 tsp. salt (optional)

    Recipe



    Grind the nuts in a little nut mill if you have one. If you don't, freeze them and grind them in small batches in a blender. Set aside. Cream the butter and the sugar together. Add the egg and stir. Mix in the ground nuts, then the maple
    flavoring. Now add the flour and optional salt. Knead the dough lightly for a minute and then refrigerate it for about forty minutes. This dough is quite soft, but it is easy to work with and makes molded cookies with exceptionally clear detail. Bake at 350 degrees for 10 to 12 minutes, or until the edges are lightly browned. This is actually a recipe for two quite different cookies. If you use English walnuts the cookies will be crumbly, mild and sweet. If you use black walnuts, your cookies will have this wonderful slightly musty taste that always reminds me of walks in the woods in West Virginia. The black walnut cookies are a treat grown-ups will love.
