Tea Cakes (cookies)

Recipe Introduction
This goes back as far as I can remember. Granmaw would make what we called tea cakes, but they were cookies. We would roll them out to a fat ¼" and cut them out with a screw on fruit jar lid. (That's a thing of the past) It would make a big cookie. Here's how we do it now.
List of Ingredients
4 cups all purpose plain flour
2 lg. eggs
1 teaspoon fresh baking soda
1/2 cup buttermilk
2 teaspoons fresh baking powder
1/2 lb (2 sticks) butter at room temp.
2 cups white granulated sugar
1 teaspoon vanilla ext.
1 teaspoon saltRecipe
Preheat your oven to 350°F. In your mixing bowl sift your flour, soda, baking powder and salt. In a smaller bowl cream butter and sugar; then add your eggs, buttermilk and vanilla. Mix good and dump in the flour mix. As soon as it makes a dough, stop and put a little vegetable oil on your hands and rub the dough with a light coat. Place in the frig for about an hour. Remove and roll out to a fat 1/4 inch. (I cheated - went down to Ace Hdwr and got me a 5/16" wood dowel and cut it in 1/2) then lay one on each side of my dough to make them the same thickness and cut with whatever cutter you want to use. Place them on a lightly greased cookie sheet. (I sprinkle mine with a light coat of white granulated sugar) Bake until a golden brown about 10 minutes.
