Frosted Crispy Peanut Butter Bars

1 cup granulated sugar
1 cup light corn syrup
1 1/2 cups smooth peanut butter
(for crunchy-style increase to 1 3/4 cups)
2 teaspoons vanilla extract
6 cups crisp rice cereal
1 cup butterscotch flavored chips
1 cup semisweet chocolate chips
Recipe
Butter a 13x9x2" baking dish; set aside. In a Dutch oven or large saucepan combine sugar and syrup and bring to a rolling boil. Remove from heat and add peanut butter and vanilla, mixing well. Stir in the rice cereal; mix well. Press mixture into prepared pan.* Melt the butterscotch and chocolate chips together in a glass measure on HIGH in microwave for 1 to 2 minutes, stirring mixture after the first minute (be careful not to scorch as the chips will retain their shape even though they are melted--until they are stirred); spread evenly over bars. Cool before cutting into squares. Makes 24 servings.
*Place a sheet of plastic wrap or waxed paper over the top to help spread and press evenly without the mess.
