    Heavenly Butterscotch Cashew Bars

    For The Crust:
    1 1/2 cups flour
    3/4 cup firmly packed brown sugar
    1/2 cup butter or regular margarine, softened
    1/4 tsp salt

    For The Topping:
    1/4 cup light corn syrup
    1 (6 oz pkg) butterscotch flavored chips (1 cup)
    2 tbsp butter or regular margarine
    1 tbsp water
    1/4 tsp salt
    1 1/2 cup cashew halves and pieces*
    *I think I would substitute chopped walnuts and also add coconut

    Recipe



    Heat oven to 350°F; grease and lightly flour a 13x9" baking dish.

    Combine all the crust ingredients in a large bowl. Beat at low speed, scraping the bowl often, until the mixture resembles coarse crumbs.

    Press the crumb mixture into the prepared baking dish. Bake for 10 minutes.

    Meanwhile, place all the topping ingredients except the cashews in a 2 quart saucepan. Cook over low heat, stirring constantly, until the chips are melted and the mixture is smooth. This will take between 4-7 minutes. Stir in the cashews until well coated.

    Spread cashew mixture over the hot, partially baked crust. Continue baking for an additional 10-12 minutes or until golden brown. Cool completely. Cut into bars. Yield: 36 bars
