I found this recipe while browsing for cookie recipes on http://www.recipexchange.com and decided to try it. It was very simple to make and tastes good too. I have copied and pasted it in its entirety, so that credit is listed as to who supplied the recipe. (Lisa) I was in a pinch for time, had to make cookies for 'snack day' at school and I didn't have shortening for the oatmeal cookie recipe I chose to make. With no time to go to the store, I substituted peanut butter for the shortening and to my surprise, it worked out well!
1 cup peanut butter
1 cup sugar
1 cup brown sugar (packed)
3 large eggs
1 teaspoon vanilla
1 1/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups quick cooking oatmeal
Recipe
In a small bowl, combine the flour, salt, baking soda and set aside. Cream together the sugars and the peanut butter. Add eggs and vanilla and beat until well combined. With your hands, mix in the flour then the oatmeal. Roll into balls and place on cookie sheet and press flat with a fork. Bake in 350�F oven for 10-12 minutes.
