Toasted Oatmeal Cookies

2 1/2 cups quick cooking or old fashioned oats
1 cup chopped walnuts
1 1/2 cups packed brown sugar
1 cup butter or regular margarine, softened
1 tsp vanilla
1 egg
1 cup all purpose flour
1 tsp baking soda
1/4 tsp saltRecipe
Heat the oven to 350°F. Spread oats and walnuts in an ungreased jelly roll pan, 15.5x10.5". Bake for 15-20 minutes, stirring occasionally until light brown. Cool.
Beat brown sugar, butter, vanilla, and egg in a large bowl with electric mixer on medium speed, or mix well using a wooden spoon. Stir in the oat mixture and the remaining ingredients. Drop dough by rounded tablespoonfuls about 2" apart on ungreased cookie sheets. Bake for 8-10 minutes or until golden brown. Cool 1-2 minutes, then remove from cookie sheets and transfer to wire racks to cool completely. Yield: about 42 cookies.
