Melting Chocolate in a microwave is very easy! It’s also very easy to ruin it – quickly! ***Place Chocolate in a microwave safe bowl (duh!). Nuke for 30 seconds. Stir. Repeat these steps until the Chocolate is almost completely melted. As with melting in a double boiler, the key is to not overheat the Chocolate. Closely monitor your Chocolate while it’s melting!!! This will ensure perfectly melted Chocolate every time.
List of Ingredients
1 (12 oz.) pkg. semi-sweet chocolate morsels
2 Tbsp. instant coffee
1 1/4 c. plain flour
1/2 tsp. salt
1/2 c. granulated sugar
1 egg
2 tsp. boiling water
3/4 tsp. baking soda
1/2 c. oleo, softened
1/2 c. firmly packed brown sugar
1/2 c. chopped walnuts
Recipe
Preheat oven to 350°F. In a small double boiler, melt 1/2 of morsels. Stir until smooth. Cool. (Or, melt in microwave per instructions above.) Put coffee and water in a cup. In a small bowl, combine flour, baking soda and salt. In a large bowl, combine oleo, brown sugar, granulated sugar and coffee; beat until creamy. Add egg and chocolate; mix thoroughly. Gradually add flour mixture. Stir in remaining morsels and walnuts. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 12 minutes. Allow to stand 2 or 3 minutes, then loosen from sheet with a spatula. Cool completely, then store in a covered container. Makes 3 dozen.
