    For The Cookies:
    1 1/4 cups flour
    3/4 cup butter, softened
    1/2 cup cornstarch
    1/3 cup powdered sugar
    1 tbsp fresh-squeezed lemon juice
    1 tsp grated lemon peel

    For The Frosting:
    3/4 cup powderd sugar
    1/4 cup butter, softened
    1 tsp fresh squeezed lemon juice
    (use more if needed in the frosting)
    1 tsp grated lemon peel

    Recipe



    In a large mixer bowl, combine all the cookie ingredients. Beat at low speed, scraping the bowl often, until well mixed. This will take about 2-3 minutes. Divide the dough in half. Shape each half into an 8x1" roll. Wrap in plastic food wrap and refrigerate until firm, about 1-2 hours. Heat oven to 350°F. With a sharp knife, cut each roll into 1/4" slices. Place 2" apart on cookie sheets. Bake for 8-12 minutes or until set. Cookies Will Not Brown. Remove from cookie sheets and cool completely.

    For the frosting, in a small mixer bowl, combine all the frosting ingredients. Beat at medium speed, scraping bowl often, until fluffy. This will take about 1-2 minutes.
    Frost cooled cookies. Makes about 48 cookies.
