Easy Lemon Bars

Makes 15 large bars
List of Ingredients
Canola oil or spray
1 box lemon cake mix with pudding (181/4 ounces)
1 large egg
3 tablespoons canola oil
3 tablespoons fat-free or light sour cream
2 tablespoons lemon juice
1/3 cup powdered sugar
8 ounces light cream cheese
1/3 cup granulated sugar
2 tablespoons lemon juice
Zest from 1 to 2 lemons
Recipe
1. Preheat oven to 350-degrees. Coat a 9-by-13-inch baking pan with canola cooking spray.
2. Pour cake mix into a large mixing bowl. Add egg, oil, sour cream and 2 tablespoons lemon juice; mix just until well blended. Reserve about a cup for the top layer, and pat the rest evenly into the prepared pan while coating the cake mix dough and your hands with powdered sugar. Bake for 12 minutes and set aside to cool.
3 Meanwhile, in medium mixing bowl, beat the cream cheese with sugar and lemon juice until smooth. Spread the mixture gently and evenly over the baked crust. With powdered sugar coating your fingers, crumble the reserved cake mix mixture over the top of the cream cheese layer.
4. Bake until filling is set and the topping is lightly browned (about 15-18 minutes). Cool before cutting into bars. Refrigerate leftovers.
