4 Cups Flour
1/2 lb. Unsalted Butter
1 teaspoon salt
2 Tablespoon Sugar
2 Cakes Yeast
2 Egg Yolks
1 Scant Cup Lukewarm Water
Walnuts or Poppy Seed Filling

Dough
Crumble the yeast into a cup with the sugar and lukewarm water. Let stand while mixing flour and butter. Blend butter and flour like you would for pie dough. Make a well, add egg yolks and yeast mixture. Mix dough thoroughly until dough leaves sides of bowl. Place dough on lightly floured surface and cut into 4 pieces. Let rest while making filling.
Walnut Filling
3 Unbeaten Egg Whites
1 Cup Ground walnuts
1 Cup Sifted Confectioners' Sugar
1 Teaspoon Vanilla
Combine egg whites, sugar and walnuts. Beat vigorously with electric mixer or rotary beater for 5 minutes. Stir in vanilla. Chill well before using.
Poppy Seed Filling
1/2- Pound Ground Poppy Seed
1 Cup Milk
3/4 Cup Sugar
1 Teaspoon Vanilla
Heat milk and add ground poppy seed, stir until milk is absorbed. Remove from heat; add sugar and 1 teaspoon vanilla.
Spread desired filling on dough. Roll into roll. Slit top and spread beaten egg whites over to with brush. Let rise 20 minutes then bake at 400°F. until golden brown.
