    Topping:
    1/2 C packed brown sugar
    1/4 C all-purpose flour
    1/4 C oats
    1/4 C peanut butter crunchy
    3 T margarine or butter
    1/4 C miniature semisweet chocolate pieces

    Cake:
    2 C all-purpose flour
    1 C packed brown sugar
    2 t baking powder
    1/2 t baking soda
    1/4 t salt
    1 C milk
    1/2 C peanut butter
    2 eggs
    1/4 C margarine or butter
    1/2 C miniature semisweet chocolate pieces

    Recipe



    Preheat oven to 375°F.

    For topping:
    In a bowl stir together brown sugar, oats and 1/2 flour; cut in peanut butter and margarine or butter until crumbly. Then add chocolate pieces and stir; set aside.

    For muffin batter:
    In a bowl stir together flour, brown sugar, baking powder, baking soda and salt. Add milk, peanut butter, eggs and margarine or butter. Beat with an electric mixer on low speed til blended. Beat at high speed for 3 minutes, scraping the sides of the bowl frequently. Stir chocolate pieces into the batter after beating.

    Pour batter into a greased muffin tins. Sprinkle with topping mixture. Bake at 375°F about 30 minutes or until a toothpick inserted near the center comes out clean. Serve warm or cool. (serves 16)
