3/4 cup orange juice
1/2 cup butter
1 egg
1 teaspoon vanilla
2 cups flour, unsifted
1/2 cup brown sugar, firmly packed
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup carrots, shredded
1 cup zucchini, shredded
1/2 cup walnuts, choppedRecipe
In a large bowl, combine juice, butter, egg and vanilla. Add rest of ingredients except carrots, zucchini and nuts. Stir just enough to moisten. Fold in carrots, zucchini and nuts. Spoon batter into muffin cups, filling about 3/4 full. Bake 18-20 minutes at 350°F until golden brown. Makes 12 muffins.
