5 Minute Chocolate Mug Cake

List of Ingredients
1 Lg. Coffee Mug or microwave safe bowl
4 Tbsp. flour (not self-rising)
4 Tbsp. sugar
2 Tbsp. powdered cocoa
1 egg
3 tablespoons milk
3 tablespoons oil (can use a bit less oil)
a small splash of vanilla
3 tablespoons chocolate chips (optional)
1 tablespoon any type of chopped nuts (optional)
dash of salt (optional)
I have also added a pinch of coconut flakes and a few drops
coconut extract.
Recipe
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips and nuts (if using) and vanilla, and mix
again. Put your mug in the microwave and cook for 3 minutes on high. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. Serves 2. Can use no frosting or any kind of frosting.
I have a simplified version I use:
1 cup (moist) chocolate cake mix
1 egg
1/4 cup oil
1/4 cup milk or water
I mix all of the above in the large coffee mug, and then throw in a handful of semi-sweet chocolate chips. But I only cook it in the microwave for 2:30, because I find at 3 minutes, the top of the cake is a little too dry. And the "gooey mess" at the bottom becomes the frosting when you turn it upside down on a plate. So yummy.
