3 T. Sugar
2 t. Ground cinnamon
1/2 t. Cardamom
1/2 t. Ground cloves
1/4 t. Fine sea salt
1/4 t. Fresh ground black pepper
1 large egg white
2 t. Grated orange zest
2 C. walnut halves (can use pecans)

Roasted Spice Walnuts
3 T. Sugar
2 t. Ground cinnamon
1/2 t. Cardamom
1/2 t. Ground cloves
1/4 t. Fine sea salt
1/4 t. Fresh ground black pepper
1 large egg white
2 t. Grated orange zest
2 C. walnut halves (can use pecans)
Preheat oven to 375°F. Line a rimmed baking sheet with foil and lightly butter the foil. In a small bowl, combine the sugar and spices. In a medium bowl, whisk the egg white until frothy. Add the sugar mixture and whisk to blend. Whisk in the zest. Add the nuts and blend thoroughly to coat the nuts. Spread the coated nuts on the pan and even out. Bake for 30 minutes, stirring every 10 minutes to loosen them, until golden. Transfer to a bowl and let cool. Store in an airtight container for up to 3 weeks. Servings: 10-12
