    2 T. Cooking oil
    1 med. Onion, chopped or grated (however you like it)
    5 med. Potatoes, scrubbed and grated
    3 lg. Eggs
    12 oz. Evaporated milk
    1 tsp. Soy sauce
    ½ dry mustard powder
    Salt and pepper to taste
    8 – 12 oz. Cheddar cheese, grated
    3 tsp. Parsley
    Shake of paprika
    Shake of Parmesan cheese

    Lightly cook onions in oil. Add potatoes and cook 5-7 minutes over medium heat. Whisk eggs, milk, soy sauce, mustard, salt and pepper. Press potatoes on bottom and sides of baking dish or pie plate. Pour egg mixture over potato "crust". Sprinkle with Cheddar cheese, parsley, paprika, and Parmesan cheese. Bake at 350 degrees for 40-50 minutes until done. (The center will be somewhat solid, not jiggley.) Serve with toast and a breakfast meat or a side salad. Is great warmed up the next day.
