Impossible Crustless Spinach Quiche

5 Eggs; beaten
1 Onion; large\chopped
1 tb Vegetable oil
1 10 oz pkg frozen chopped spinach, thawed/pressed dry
3 c Muenster cheese; shredded (12 oz)
1/4 ts Salt
1/8 ts Pepper

Recipe



Saute onion in oil in a large skillet until tender. Add spinach, and cook until excess moisture evaporates; cool.
Combine eggs, cheese, salt and pepper; stir into spinach mixture. Pour into a greased 9-inch pie plate. Bake at 350F for 30 minutes or until set.
