    3 cups flour
    1 teaspoon salt
    1 teaspoon baking soda
    3 teaspoons cinnamon
    1/2 teaspoon baking powder
    3 eggs
    1 cup vegetable oil
    2 cups sugar
    3 teaspoons vanilla
    1 cup chopped nuts (walnuts or pecans)
    2 cups A-Z*

    Recipe



    Preheat oven to 325°F. Grease 2 loaf pans, set aside. In a large bowl sift dry ingredients, set aside. In a medium bowl whisk eggs, oil, sugar, and vanilla until incorporated. Add A-Z and nuts. Add dry ingredients and mix well. Pour equally into the loaf pans. Bake for 1 hour.

    *A-Z: use one of the following, or a mixture of the following, to equal 2 cups:
    grated apples, blueberries, chocolate chips, chopped apricots, mashed bananas, grated carrots, pitted and chopped cherries, shredded coconut, pitted and finely chopped dates, finely chopped figs, crushed and drained pineapple, canned pumpkin, raisins, raspberries, grated zucchini.

    My favorite combinations:
    mashed banana/chocolate chips/walnuts
    grated apple/dried cherries/pecans
    grated carrots/shredded coconut/pecans
    zucchini/walnuts
    canned pumpkin/pecans

    The A to Z Bread, the inspiration of Hazel Gentry of Walnut Creek was the grand prize winner in the Contra Costa Times Favorite Recipes Contest in 1976. It is a recipe for a basic quick bread with enough variations to delight bread enthusiasts for years to come! This recipe is reprinted from the Contra Costa Times June 1, 1977.

    * 3 cups flour
    * 1 tsp. salt
    * 1 tsp. soda
    * 3 tsp. cinnamon (optional)
    * ½ tsp. baking powder
    * 3 eggs
    * 1 cup oil
    * 2 cups sugar
    * 2 cups A to Z
    * 3 tsp. vanilla
    * 1 cup chopped nuts

    Sift dry ingredients; set aside. Beat eggs in a large bowl; add oil and sugar; cream well.

    Add A to Z and vanilla. Add dry ingredients. Mix well. Add nuts. Spoon into 2 well-greased loaf pans. Bake in preheated oven at 325°F for 1 hour. Makes 2 large loaves.

    A to Z: For this recipe, use one of the following, or a mixture of the following, to equal 2 cups - except as indicated:

    * Apples - grated
    * Applesauce
    * Apricots - chopped
    * Bananas - mashed
    * Carrots - grated
    * Cherries - pitted and chopped
    * Coconut - fresh, ground
    * Dates - pitted and finely chopped
    * Eggplant - ground up
    * Figs - finely chopped
    * Grapes - seedless
    * Honey - omit sugar above
    * Lemons - use only 1/2 cup of juice
    * Marmalade - omit 1 cup sugar
    * Mincemeat
    * Oranges - chopped
    * Peaches - fresh or canned chopped
    * Peppermint - use only ½ cup
    * Pears - chopped
    * Pineapple - canned, crushed, well-drained
    * Prunes - chopped (use only 1 cup)
    * Pumpkin - canned
    * Raisins
    * Raspberries
    * Rhubarb, finely chopped
    * Strawberries - fresh or well-drained frozen
    * Sweet Potato - grated coarsely
    * Tapioca - cooked
    * Tomatoes - use only 1/2 cup sugar in above recipe
    * Yams - cooked and mashed
    * Yogurt - plain or flavored
    * Zucchini - ground or grated, well drained

    A to Z Bread
    2 cups sugar
    1 cup vegetable or canola oil
    3 eggs
    2 cups total A to Z ingredients (see list below)(one choice or more from list to
    equal 2 cups)
    1 T vanilla extract or 1/2 T vanilla extract and 1/2 T other extract
    3 cups all-purpose flour
    2-tsp. ground cinnamon or mixture of cinnamon and another sweet spice (mace, allspice, pumpkin pie spice, cloves, nutmeg)
    1 tsp. Baking powder
    1 tsp. Baking soda
    1 tsp. Salt
    1 cup chopped nuts (optional)

    A to Z Ingredients:
    1) Apples, peeled and shredded
    2) Applesauce
    3) Apricots (dried), chopped
    4) Banana, mashed
    5) Carrots, shredded
    6) Coconut
    7) Dates, pitted and chopped
    8) Figs (dried), chopped
    9) Grapes (seedless), chopped
    10) Oranges, peeled and chopped
    11) Peaches, peeled and chopped
    12) Pears, peeled and chopped
    13) Pineapple (canned), crushed and drained
    14) Prunes, pitted and chopped
    15) Pumpkin, canned

    17) Golden raisins

    54) Tomatoes (only use 1/2 c. Sugar)
    55) Yogurt, plain or flavored

    In a mixing bowl, combine the sugar, oil and eggs; mix well. Stir in A to Z ingredients of your choice and extract. Combine flour, cinnamon, baking powder, baking soda and salt; stir into liquid ingredients just until moistened. Stir in nuts. Pour into two greased 8x4x2" loaf pans. Bake at 325°F for 55-65 minutes or until a wooden pick inserted near the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool. Makes 2 loaves.
