A favorite breakfast at my house is homemade granola. I make large batches and keep it in an airtight container to munch on all week. We eat it with milk, on yogurt, sprinkled on roasted fruit, and straight out of the jar. I make different varieties and it is a different flavor every week. I love this pumpkin and pecan version when the weather begins to cool. Feel free to add different dried fruits, nuts and flavorings to make something new.
Another thing that I love about homemade granola is that it makes a wonderful hostess gift. When someone invites me over for dinner, I like to bring a gift to show my appreciation. I like the idea of the host having a stress-free and homemade breakfast on hand the morning after our dinner. Making it into a beautiful gift is as simple as putting the granola into a glass jar and attaching a ribbon. By Bree
1/2 cup (1 stick) butter, melted
1/2 cup pumpkin puree
1/4 cup pure maple syrup
1/4 cup brown sugar
1 teaspoon vanilla
1 1/4 teaspoons pumpkin pie spice
1/2 teaspoon salt
4 cups old fashioned oats
1/4 cup ground flax seed (optional)
1 cup pecans
Recipe
Preheat oven to 350°F. Line a baking sheet with parchment paper. In a large bowl, mix butter, pumpkin, syrup, brown sugar, vanilla, pumpkin pie spice, and salt. Add oats and flax seed. Mix until well combined. Spread onto baking sheet. Bake for 45 minutes, turning occasionally. Add pecans and bake for another 15 minutes. Remove from oven to cool. Granola will harden as it cools.
