    (7/29/2011) Note from RecipeLand: Farm fresh green beans are flooding the markets right now across the country. We got a ton of green beans from our local farm & have been trying literally dozens of green bean recipes. This one is a winner, sure to get everyone gobbling up those veggies. Green beans are braised in a skillet with orange juice & chicken stock. Then, served with toasted butter-maple pecans. Make a double-batch because your kids will become veggie lovers once they try this.

    List of Ingredients




    1 cup pecans, roughly chopped
    1 tablespoon butter, melted
    1 1/2 tablespoons maple syrup
    pinch of salt (if using unsalted butter)
    1 tablespoon butter
    2 shallots, finely chopped
    1/4 teaspoon red pepper flakes
    1/2 tablespoon all-purpose flour
    18 ozs (1 1/2 lbs) green beans, ends trimmed
    1/2 cup orange juice
    1/2 cup chicken broth
    2 teaspoons freshly chopped sage leaves
    salt & black pepper to taste

    Recipe



    1. Preheat your oven to 350ºF (or use your toaster oven).

    2. Add the pecans, butter & maple syrup to a small bowl. Mix until well combined. Spread this mixture on a baking sheet & toast until deeply browned & very fragrant; about 15 minutes. Remove from the oven & transfer the pecans onto a piece of waxed paper, which keeps the candied pecans from being sticky.

    3. In a large non-stick skillet, melt the butter over medium-high heat. Add the shallots, stirring & cook for 2 to 3 minutes until soft. Add the flour & mix well. Stir in the green beans. Then, pour the orange juice, chicken broth & sage, stirring as you add ingredients. Cover & cook for about 4 minutes.

    4. Uncover & cook for another 4 minutes, until the green beans are tender.

    5. Remove from the heat. Add salt & black pepper to taste.

    6. Top with the toasted butter-maple pecans. Serves 8.
