These are often my go-to potatoes when I want a simple side dish to serve with chicken or pork chops - as was the case last weekend for our Sunday dinner when we had barbecue chicken. They are super quick and easy to throw together ... toss the taters with some seasoning and olive oil and allow the oven to roast them up to crisp, golden perfection.
I usually serve these with a side of garlic aioli (a garlic-flavored mayo) that can be whipped up in like, two minutes. The kids love these potatoes with plain ketchup, but the garlic mayo is divine for dipping these little spud nuggets into bite-after-scrumptious-bite. Angela Steveson
