    One egg is equivalent in leavening power to 1/2 tsp. baking powder.

    1/2 tsp. soda with 1 cup sour milk is the equivalent to 1 1/2 tsp. baking powder and will leaven 1 1/2 to 2 cups flour. Soda is a dry ingredient and should be added with dry ingredients, some leavening power is lost when added with liquids.

    1 cup sweet milk may be substituted for 1 cup sour milk by adding 1 1/3 tbl. vinegar or 1 1/2 tbl. lemon juice. Also, 1/4 cup grapefruit juice or 3/4 cup orange juice with water or sweet milk to make 1 cup may be substituted for sour milk.

    3 1/2 tbsp. cocoa plus 1/2 tbsp. butter is equivalent to 1 oz. or 1 sq. chocolate.

    Another substitution we received for chocolate is: 1 sq. chocolate = 3/4 T cocoa + 1/2 T shortening

    In substituting hydrogenated fat for butter, add 1/2 tsp. salt for each cup fat.
