Ingredients 1 lb. Loaf
1/2 cup Milk
1/3 cup Water
1 tbsp. Vegetable Oil
2-3/4 cups Bread Flour
1/3 cup Instant Potato Flakes
2 tsp. Sugar
1 tsp. Salt
1/8 tsp. Ground White Pepper (opt.)
1-3/4 tsp. Active Dry Yeast

1/2 cup Water
2 tbsp. Vegetable Oil
3 cups Bread Flour
1/2 cup Instant Potato Flakes
1 tbsp. Sugar
1-1/2 tsp. Salt
1/4 tsp. Ground White Pepper (opt.)
2 tsp. Active Dry YeastRecipe
Select desired setting: press start.
If you wish to use dry nonfat milk for the recipe in place of regular milk, substitute 2 tbsp. dry nonfat milk plus 3 1/2 oz. water for the 1 lb. loaf, or 3 tbsp. dry nonfat milk plus 5 oz. water for the 1 1/2 lb loaf. The milk powder can be added to the dry ingredients and the additional water can be added to the water listed in the recipe.
If you normally make bread early in the morning, you can save time by mixing all the dry ingredients EXCEPT the yeast, and put it in a sealable container the night before. Then, in the morning just add the milk, water, and oil together and add the liquid ingredients, the dry ingredients, and the yeast into the machine in the order that machine's instructions recommend, and start. It's that simple.
The recipe can also be used for buns (Hamburger, Hoagie, or Hot Dog), rolls, or breadsticks if you remove the dough form the machine just after the mixing cycle. Just form into the desired shapes, place on a lightly greased cookie sheet, and cover with a damp dish cloth. Place in a warm, draftfree place and allow to rise until doubled, then bake in a preheated 375 degrees F. oven. When removed from the oven, the buns, rolls, or breadsticks should be transferred to wire racks. Immediately brush the tops with margarine and allow to cool. Omit the margarine if you want a hard crust.
Approximate times for baking are: 25 minutes for Buns, 15 to 18 minutes for dinner rolls, 12 minutes for breadsticks. Because ovens are different, you should watch the first batches, and adjust times accordingly.
If you wish you can remove the buns a couple of minutes early, brush with lightly beaten egg whites, sprinkle with sesame seeds, poppy, seeds, or even anise seeds. Return to the oven for the remaining time.
For cheese breadsticks, flatten the dough after removing from the machine, sprinkle with grated Parmesan cheese (or, you can use the dry powdered cheese packet from a package of Macaroni and Cheese (reserve the pasta for another use) and sprinkle that!). Knead until well incorporated, then shape into breadsticks, allow to rise, and bake! With the cheese added, you may have to decrease the time slightly.
