This is an original recipe. It should work well for diabetics, too! I made this for my mother in law who was a diabetic. I mixed all dry ingredients in small bottles; mixed all wet ingredients except for the milk in other bottles and gave them to her in sets. All she had to do was add the milk to the wet ingredients bottle, shake, mix the two and pour into a hot skillet.
List of Ingredients
Dry Ingredients:
1 TBSP whole wheat flour
2 TBSP all purpose flour
4 tsp cornmeal (not mix)
1/4 tsp baking powder
1 pinch salt (or substitute)
Wet Ingredients:
1/4 tsp almond extract
2 TBSP Canola oil
3 TBSP milk Recipe
Mix all dry ingredients together well.
Mix all wet ingredients well.
Mix wet and dry inredients just until moistened. If necessary, adjust thinness with additional milk. Cook on a hot griddle until done on one side, then flip and cook on the other side. Eat with your choice of pancake syrups.
I make mine about 2 inches in diameter and thin because I like them that way.
