    WOOLWORTH'S CHEESECAKE

    Recipe Introduction

    I do not know whether this is the real recipe or if it's just another copycat recipe, but I do know it tastes like the cheesecake I used to eat at Woolworths lunch counter many years ago, so I'm including it here.

    List of Ingredients

    1 (3 ounce) package lemon Jell-O
    1 cup boiling water
    8 ounces cream cheese
    1 cup granulated sugar
    5 tablespoons lemon juice
    1 can Carnation milk, well chilled
    Graham crackers, crushed

    Recipe

    Dissolve Jell-O in boiling water. Cool until slightly thickened. Beat cream cheese, sugar and lemon juice with mixer until smooth. Add thickened Jell-O and beat well. In a separate bowl, beat the Carnation milk until fluffy. Add cream cheese/Jell-O mixture and beat well with mixer. Line bottom of 9 x 13-pan with crushed Graham crackers. Spread filling over and top with more crushed Graham crackers. Chill.
    Note: Though the recipe didn't call for it, I mixed the Graham crackers with 3 TBSP. butter and 3 TBSP all purpose flour before pressing into the pan. I also baked that for 10 minutes at 375 degrees F. and allowed it to cool before filling.
