    On the back of a Betty Crocker instant mashed potato box

    An unusual, but clever use of leftover mashed potatoes, you'll like these cookies

    List of Ingredients




    1 c. molasses
    1/2 c. margarine or butter
    1/2 c. granulated sugar
    1/2 c. mashed potatoes
    1/2 c. sour milk
    4 c. flour
    1 tsp. baking soda
    1 1/2 tsp. salt
    2 tsp. ginger
    2 tsp. cinnamon

    Recipe



    Heat molasses. Add margarine or butter. Cool slowly and add sugar, potatoes and sour milk. Mix and sift 2 cups flour with other dry ingredients. Add enough more of flour as necessary. Chill 1 hour or more covered. Roll ¼ inch thickness. Cut with cookie cutters. Bake about 15 minutes at 350 degrees.
