    WHITE BEAN DIP

    Recipe Introduction

    This recipe was adapted from a dish developed by Trey Foshee, executive chef at George's at the Cove in La Jolla, California.

    List of Ingredients

    5 medium garlic cloves, sliced
    1/2 cup olive oil
    2 (15.8-ounce) cans BUSH'S BEST Great Northern Beans, rinsed and drained
    1/4 cup fresh lemon juice
    2 tablespoons chopped fresh parsley
    1 teaspoon ground cumin
    Salt to taste
    Ground black pepper to taste
    1/4 teaspoon ground red pepper
    Assorted fresh vegetables
    Pita bread, bagel or tortilla chips (optional)

    Recipe

    Saut� garlic in hot oil in a saucepan over medium heat 1 1/2 minutes or until lightly browned. Cool slightly. Remove garlic with a slotted spoon, reserving oil. Process garlic, beans, and next 6 ingredients in a food processor until smooth, stopping to scrape down sides. With processor running, pour reserved oil through food chute in a slow, steady stream, continuing to process until smooth. Chill at least 1 hour or up to 2 days. Serve dip with assorted fresh vegetables and, if desired, pita bread or bagel or tortilla chips. Makes 3 cups
