    Recipe Introduction


    My first interest in this recipe was when we needed some diabetic recipes to serve my wife's diabetic mother. Now, because we like it so much, it's a well used recipe in this household.

    List of Ingredients




    1 1/2 lbs. Sole fillets
    1 6 oz. can tomato paste
    1/2 cup water
    2 tsp. fresh lime juice
    1 tsp. coconut flavoring
    1/2 tsp. nutmeg
    1/2 tsp. dried onion flakes

    Recipe



    Clean fillets as necessary, defrost, if frozen. In a microwavable shallow baking dish, lightly grease with your favorite nonstick cooking spray. In a separate bowl, combine all the remaining ingredients. Mix, and allow to set 5 minutes to allow blending of flavors. In the meantime, place fillets evenly in the bottom of the pan. Pour the sauce evenly over the fish. Cover with waxed paper, microwave on MEDIUM (50% or about 350 watts) for 10 to 15 minutes, just until the fish flakes easily using a fork. Turn the dish twice during the cooking period. When serving, spoon a bit of the extra sauce over the fillet, garnish with chopped fresh parsley and a twisted thin slice of lime, seeds removed. Serves 4 nicely.
