CHRISTMAS PLUM PUDDING

Recipe Introduction
It wouldnt be Christmas without a plum pudding!
List of Ingredients
1 cup sifted flour
1 teaspoon baking soda
1⁄2 teaspoon salt
1 teaspoon ground cinnamon
1⁄4 teaspoon ground allspice
1⁄4 teaspoon ground ginger
1 cup seedless raisins
1 cup chopped dates
1⁄2 cup mixed candied fruits (pineapple and cherry are good)
1⁄2 cup chopped walnuts
4 slices bread, cut into1⁄2-inch cubes
1 cup milk
1 cup brown sugar
1⁄4 cup orange juice
1 teaspoon vanilla
1 stick butter, cut into pieces
2 eggs, slightly beaten
Orange Hard Sauce
1 stick butter, softened
1 cup sifted powdered sugar
4 teaspoons grated orange rind
4 teaspoons orange juice (may use rum)
Recipe
Sift together flour, soda and salt and spices. Stir in raisins, dates, fruits and nuts. Soak bread crumbs in milk. Stir brown sugar, orange juice, vanilla and butter into eggs. Stir in bread and milk. Add dry ingredients until well mixed. Pour into a well greased 1 1⁄2 quart mold or ovenproof bowl. Cover mold with double thickness of foil, pressing around the edge and tying with string. Place mold on rack in a deep pot. Add boiling water to a depth of 2-3 inches. Cover, place on stove and simmer and steam for 31⁄2 to 4 hours. Add water to pot during steaming if needed. Cool 10 minutes. Invert on plate and unmold. Serve warm or cold with orange hard sauce.
Orange Hard Sauce: Blend butter and powdered sugar. Add rind and orange juice to dry ingredients. Combine well. Refrigerate 1 hour or more. Warm the sauce slightly before serving, if needed. Yield: Serves 10-12
