    WHITE MEXICAN CHEESE DIP

    Chef at El Dorito Restaurent in Nashville Tennessee (no longer there)

    Recipe Introduction

    A white dipping sauce served with tortilla chips for dipping in many Mexican restaurants . You have to ask (and usually pay extra) for it.

    List of Ingredients

    1 cup shredded Asadero cheese (see below)
    4 oz jalapeno chilies, drained and chopped
    1/4 cup half and half
    2 T finely chopped onion
    2 tsp ground cumin
    1/2 tsp salt

    Recipe

    Heat all ingredients over low heat stirring constantly until cheese is melted. Serve with tortilla or corn chips.

    Rusty's Note: Asadero cheese is now available at WalMart SuperCenters in the specialty cheese section near the deli. It’s about $4.00/pound. I believe it's sold as "Mexican Cheese" and has a dip recipe on the package. However, I've been told at numerous other Mexican Restaurents that they just use White Cheddar Cheese and a little Taco Seasoning.
