    A healthy, inexpensive way to use those summertime homegrown tomatoes (and purchased ones, too!)

    List of Ingredients




    6 Medium tomatoes
    1 pkg. (10 oz.) frozen chopped spinach
    1 pkg. Chicken Flavor Ramen Noodles
    1 cup water, boiling
    ½ cup sour cream
    ½ tsp. Basil
    Parmesan Cheese

    Recipe



    Cut off top slice and hollow out the tomatoes. Cook frozen chopped spinach as directed. Drain. Before opening, break up Ramen Noodles. Cook in 1 cup boiling water along with seasonings from the Flavor Packet for 3 minutes, stirring occasionally. Drain noodles well and mix with spinach, sour cream, and basil. Spoon mixture into the tomatoes. Place in a baking dish and sprinkle with Parmesan cheese. Bake at 350ø F. for 15 to 20 minutes. Serve with meat, fish, or poultry. Serves 6.
