Mom always kept this on hand, even before plastic bags existed. She'd use Glass containers that originally had stuffed green olives in them.
List of Ingredients
3/4 cup instant minced onion (onion flakes)
1/3 cup beef flavored instant bouillon (Mom used 5 beef flavored bouillon cubes, crushed)
1 1/2 Tbsp. onion powder (Do Not use onion salt!)
1/4 tsp. sugar
1/4 tsp. celery seed, finely crushedRecipe
Mix all ingredients together. Stir or shake before each use (Mom just rolled the jar on the kitchen counter.) Can store up to 6 months in cool, dry place if kept in a sealable glass jar.
My note: Approximately five tablespoons of the mix seems to equal one 1.25-oz. pkg. of purchased dry onion soup mix.
To use for soup: Put 5 Tbsp. of the above into a pot and gradually stir in 4 cups cold water and 1 Tbsp. butter. Bring to boil, reduce heat and cover. Simmer 25 minutes. Divide soup into four oven proof bowls, sprinkle with croutons. Then add one slice provalone cheese to each bowl. Put bowls under a broiler just long enough to melt cheese. Serve. Makes 4 1-cup servings.
To use for Onion Dip: Mix 5 Tbsp. of the above onion soup mix with 2 cups sour cream. Add a little white pepper, to taste. Refrigerate for a couple of hours before you serve it.
