BANANA RAISIN MUFFINS

One of the all time favorites, these are great for breakfast and snacks.
List of Ingredients
1/2 cup raisins (sultanas-yellow; or dark raisins, per your taste);
1/4 cup apple or orange juice
1/2 cup low-fat buttermilk
2 egg whites
1 Tbsp vegetable oil
3 Tbsp honey
1 1/2 cups unbleached white flour
1/3 cup stone-ground white cornmeal
2 tsp baking powder
1 tsp baking soda
1/4 cup brown sugar
1 tsp ground ginger
1/4 tsp ground cardamom
2 ripe bananas, dicedRecipe
Preheat oven to 375 degrees F. Use either paper liners or grease muffin pan with cooking spray. Combine raisins and juice, let stand for 5 minutes. Add buttermilk, egg whites, oil, and honey. Whisk until smooth. Sift flour, cornmeal, baking powder, baking soda. Add brown sugar and spices. Whisk until mixed well, then add bananas and toss lightly, and combine wet and dryingredients, stirring to mix, but not overmix. Pour into prepared muffin tin, and bake for 25 minutes. Delicious!
