For delicious breads that can be made when time is at a premium, choose
flavorful quick breads. These rich breads use baking powder and baking soda as
leavening agents and therefore require no kneading or rising. The South`s
finest cooks choose White Lily All-Purpose Flour for their baking needs. For
over a century, White Lily Flour has been prized for its consistenly high quality
and unique baking characteristics. To eliminate rims around the edges of quick breads, grease baking pans on bottom and only 1/2-inch up sides. Check quick breads 10 to 15 minutes before end of baking time. If browning too fast, cover loosely with foil. For easier slicing and better flavor, cover and store quick breads overnight before serving.

1 cup snipped or chopped dried apricots
Boiling water (Approx. 2 cups)
2 cups Whit Lily All-Purpose Soft Wheat Flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 egg, beaten
2 tablespoons vegetable oil
2 teaspoons grated fresh orange peel
1/2 cup chopped pecans
1/2 cup sifted confectioners sugar
1 to 2 teaspoons orange juice

Preheat oven to 350 degrees. Lightly grease one 8x4x2-inch loaf pan; set aside. In small bowl, combine apricots and enough boiling water to cover; set aside. In mixing bowl, combine flour, sugar, baking powder, salt and baking soda. Combine 3/4 cup orange juice, egg, oil and 2 teaspoons orange peel. Add to flour mixture, stirring just until moistened. Drain apricots thoroughly. Fold apricots and pecans into batter. Spoon batter into prepared pan. Bake for 50 to 60 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes in pan. Remove from pan and cool completely on wire rack. To make glaze, blend confectioners sugar with 1 teaspoon orange juice. Add additional orange juice to make of drizzling coinsistency. Drizzle glaze over loaf. Sprinkle grated orange peel over glaze, if desired. Makes 1 large loaf.
