    CRANBERRY AND NUT BREAD

    Source of Recipe

    From the folks at McCormick

    Recipe Introduction

The citrus character of orange extract adds just the right background flavor to this moist and attractive holiday bread. You may want to buy half a dozen cans of Whole Cranberry Sauce while it's still on sale so you can make this delicious bread well into next year!

    List of Ingredients

    1 cup sugar
1/4 cup butter or margarine, softened
    1 cup milk
    1 egg
    1 1/2 teaspoons McCormick® Ground Cinnamon
    1 1/2 teaspoons McCormick® Pure Vanilla Extract
1/2 teaspoon McCormick® Pure Orange Extract
    2 cups all purpose flour
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 cup whole cranberry sauce
1/2 cup chopped pecans (I use 3/4 cup)

    Recipe

Preheat oven to 350°F. Grease and flour one 9 x 5 x 3 inch loaf pan. Set aside. Cream sugar and butter or margarine in a large bowl. Add milk, egg, vanilla and orange extracts; beat well. Combine flour, baking powder, baking soda, salt, and cinnamon in a separate bowl. Using a spatula or spoon gently add flour mixture to milk mixture. Fold in cranberry sauce and pecans. Pour into prepared pan. Bake 60 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely on rack.
