    great for using up the surplus zucchini, Makes 2 loaves.

    List of Ingredients




    2 cups flour
    2 teaspoons cinnamon
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon allspice
    1/2 teaspoon baking powder
    2 1/2 cups sugar
    1 1/2 cups vegetable oil
    3 eggs
    1 tablespoon vanilla extract
    2 teaspoons grated lemons, zest of
    2 cups grated zucchini
    1 cup walnuts, toasted and chopped (4 oz)

    Preheat oven to 325º F. Butter and flour 2 8" loaf pans. Whisk the first 6 ingredients in a bowl. In another bowl whisk together sugar, oil, eggs, vanilla, zest, blend well. Add dry ingredients to egg mixture. Whisk in zucchini and walnuts. Pour into pans, bake about 1 hour, 15 minutes until toothpick inserted in center comes out clean. Let cool for 10 minutes then turn out to a rack to cool completely.
