    THIS GARLICKY, GINGERY SAUCE IS GREAT ON BARBECUED OR
    ROASTED CHICKEN, BEEF, OR PORK, OR OVER HOMEMADE BISCUITS

    List of Ingredients




    2 med. onions, quartered
    5 cloves garlic
    3 TBSP coarsely chopped
    fresh gingerroot
    2 TBSP vegetable oil
    1 12 oz. jar unsalted peanuts, chopped
    1 TBSP curry powder
    2 to 3 tsp chili powder
    1 cup mango chutney
    1 cup distilled white vinegar
    3 cups water

    Recipe



    Chop onions, garlic, and ginger in a food processor. Heat oil in a 2 quart saucepan over medium-high heat and saut onion mixture 10 minutes, stirring frequently until browned. Add peanuts to pan with curry and chili powder, saut for 2 to 3 minutes, stirring constantly. Add chutney, vinegar, and water. Bring to a boil, lower heat and simmer for 20 minutes. Remove from heat and serve as a topping or relish. Makes about 6 cups sauce.
